What Is Green tea?
Green Tea is produced in mainly in Japan. It is made by steaming the Camellia sinensis leaves to prevent them from changing colour and to inactivate the enzymes in the tea leaves. Steaming is then followed by rolling and drying. This leads to the retention of the green color in the leaves, especially the finer leaves. The bigger leaves are often blackish gray in colour.
The beverage obtained is greenish-yellow in color and has a distinctive bitter and astringent taste. It has little aroma and flavour as compared to black tea as the steaming destroys the enzymes that produce flavouring substance during fermentation of black tea. The caffeine content in green tea is also higher.
Unlike black or oolong tea green tea is neither fermented nor withered.
